Coconut Chocolate "Almond Joy" Cookies (Vegan)

Lately, every time I’ve been inspired to bake something, it always turns out as a cookie and I think I’m okay with that! Especially when they turn out like these coconut chocolate cookies! The ingredients are so simple and yet the cookies are some of the fluffiest, dreamiest, most flavorful cookies I’ve had! Although there is a lot of coconut ingredients in these cookies, it is not overpowering and adds the perfect bit of texture to these cookies! Hope you enjoy!

Coconut Chocolate Almond Joy Cookies:

2 cups all-purpose flour

1 tsp baking soda

1/2 cup coconut sugar

1 tsp cinnamon

1/3 cup unsweetened coconut flakes

1/2 cup applesauce

1/4 cup coconut oil (solid)

2 tbsp coconut butter

1 tsp vanilla

2 tbsp maple syrup

1/3 cup oat milk (any nut milk should work)

1/2 cup chocolate chips

Directions:

Preheat oven to 375. Combine all ingredients into a mixing bowl and mix until cookie dough consistency is reached. Pop the dough in the fridge or freezer for 15-20 minutes. Scoop cookies onto parchment lined pan and bake for 12 to 15 minutes!
