Chai Sweet Potato Muffins (Vegan)

Muffins are one of my favorite recipes to try out because they almost always turn out and the flavor combinations are always fun! This muffin recipe developed as a tribute to my love for chai tea and the sudden realization that chai actually tastes good in a LOT of recipes! These muffins are basically foolproof, so I hope that you try them out and enjoy!

Dry Ingredients:

1 1/2 c. all purpose flour

1 1/2 c. Oat Flour

3 tsp chai spice powder mix (I used Blue Lotus Chai which contains a mix of dried black tea powder, ginger, cardamom, cinnamon, black pepper, nutmeg, and cloves)

2 tsp. Cinnamon

1 tsp. Baking soda

1/4 c. Coconut sugar

1/4 c. walnut pieces

Wet ingredients:

1 c. milk alternative (I used oat milk)

1 c. Sweet potato puree

1/8 c. (Or less) honey or maple syrup

3 tbsp. Coconut oil (melted)

1 tsp vanilla extract

Directions: Preheat oven to 375 degrees. Mix wet ingredients into dry ingredients, add chocolate chips and walnuts to the batter & top (if desired), sprinkle with a little coconut sugar & bake at 375 for 18 minutes!
