Hazelnut Brownies (Gluten Free, Vegan)

Okay, by now I think it’s pretty obvious that I have a sweet tooth. I love creating recipes of classics that are more nutritious and I can’t believe it’s taken me this long to whip up some brownies! These brownies are easy to make, perfectly gooey, chocolatey, and nutty!

Hazelnut Brownies:

Dry Ingredients:

1 1/2 C. oat flour

1/2 C. coconut flour

1 tsp cinnamon

1/3 C. unsweetened cocoa powder

1 tsp baking soda

6 dates

1/4 C. hazelnuts (Chopped)

1/4 c. chocolate chips

(Optional toppings: additional hazelnuts, chocolate chips, and almond slices)

Wet Ingredients:

1/2 C. unsweetened applesauce

1/3 C. Ground Up Oregon Hazelnut Almond & Hazelnut Butter

1/2 C. pumpkin puree

2 tsp maple syrup

Directions:

  1. Preheat oven to 350 degrees.

  2. Mix all dry ingredients into a mixing bowl.

  3. Combine pumpkin puree and dates in a food processor until combined

  4. Mix all wet ingredients into a mixing bowl.

  5. Combine wet and dry ingredients

  6. Top with chocolate chips, additional hazelnuts and almonds

  7. Pop into the oven and bake at 350 for minutes

  8. Allow to cool & enjoy!
