Pumpkin Oatmeal Chocolate Chip Breakfast Cookies

Cookies for breakfast?! Don't mind if I do!

These breakfast cookies are the perfect grab and go breakfast! Plus, who doesn't want a treat to start out their day? These cookies will only take about 30 minutes total and are so worth it! You'll  be lucky if you have enough of these to last you for the week! 

 

 

 

Pumpkin Oatmeal Chocolate Chip Breakfast Cookies: 

 

Combine and mix: 

2 cups oat flour (I make my own in my Vitamix) 

1 cup rolled oats 

1/4 cup chopped pumpkin seeds 

1 tsp baking soda

3 tsp cinnamon 

1/2 tsp sea salt 

1 tsp pumpkin spice 

 

In a separate bowl combine: 

1 egg

3/4 cups pumpkin puree (either canned or homemade) 

1/4 cup cane sugar 

1/2 cup melted coconut oil 

1/4 cup maple syrup 

1 tsp vanilla extract 

1/2-3/4 cup Enjoy Life Mini Chocolate Chips 

 

Instructions: 

  1. Preheat oven to 375

  2. Add dry ingredients to wet ingredients 

  3. Mix well 

  4. On a baking sheet, scoop cookie mix with a large scooper 

  5. Flatten cookies a bit 

  6. Sprinkle with more chocolate chips 

  7. Bake at 375 for 15-17 minutes 

  8. Allow to cool 

  9. Enjoy! 

And just like that you have an easy, tasty, and healthy way to start your day! I freeze the cookies to save them for mornings where I need this kind of pick me up!
